“Crazy Cajun Dip”

1 lb. warm boudin, casing removed
6 Tbsp. real bacon pieces
1 – 8 oz. package cream cheese
½ cup Mayonnaise
½ cup sour cream
4-6 jalapenos seeded and chopped
1 cup shredded pepper jack cheese
½ cup mozzarella cheese
½ cup chopped green onions
½ cup chopped parsley
1 cup cracklins, crushed
½ cup parmesan cheese
½ stick butter, melted

Preheat oven to 350 degrees.

Combine first 10 ingredients in a medium bowl. Mix well. Transfer to a 2 quart ovenproof dish. Combine Cracklin crumbs, parmesan cheese and melted butter. Sprinkle over the top.

Bake the dip 20-30 minutes or until bubbly.

Serve warm with rice crackers and pork skins; or as desired.
